Goat Meat Recipes
Chilli
1 medium onion, chopped
mixed chopped peppers
25g margarine
1tsb olive oil
500g minced goat meat
100g red lentils
small can chopped tomatoes
salt
pepper
chilli powder
2tbs tomato puree
1tbs beef gravy powder
1 tsb cornflour
small can of sweet corn
small can of kidney beans
In a large skillet sauté chopped onion and peppers with margarine and olive oil until tender. Add minced goat meat, brown then allow to simmer together for 5 mins. In a saucepan bring to boil red lentils in about 500ml water. Drain/spoon fat off the meat, add chopped tomatoes and tomato puree. Add salt, pepper and chilli powder to taste, then add lentil mixture to the skillet. Combine gravy powder with cornflour and a little could water to make a paste, add slowly to skillet stirring continuously. Bring to simmering point. Add corn and kidney beans. Serve with cornbread.
Cornbread
3/4cup maize meal
1 cup flour
3tsp baking powder
1tbs sugar
1 cup milk
1 medium egg
2tbp margarine
Sift dry ingredients into a bowl. Mix the remaining ingredients together in a bowl, then add dry mixture and stir well. Pour into a greased 8” square tin and place in hot oven (200ºC) for 20 mins.
Meat Loaf
1 medium sized onion
two slices of bread
One egg
1tsp salt
pepper
1tbs fresh parsley
½ cup porridge oats
2-3tbs tomato puree
400-500g pork sausage meat
400-500g goat mince meat
Grate onion and bread into a large mixing bowl. Add egg, parsley, salt, pepper to taste, porridge oats, tomato puree, then equal amounts of pork sausage meat and goat meat mince. Mix well with a fork, add water and blend to a soft consistency. Spoon into a large loaf tin, cover with aluminium foil and bake at 180ºC for approximately 1.5 hours, draining off the fat after 1 hour.
Goat Meat Casserole
A leg, shoulder or joint of goat meat
A sachet of bouquet garnet
2 beef bouillon cubes
Brown the meat in the casserole dish placed on top of the hob. Add hot water to half cover the meat, bouquet garnet and beef bouillon cubes, then bring to simmering point. Cover and place in medium heat oven (150-175ºC), for approximately 2.5 hours or until tender. Turn meat half way through cooking.
